Guinness is set to open its brewery near the Fulton Market District this summer, and the brews it will be serving might take customers by surprise. The brewery at 901 W. Kinzie St. will serve the Guinness Draught Stout, for which the Irish beer company is known, but it will be imported from its St. James's Gate facility in Dublin, Ireland. At the Chicago brewery, Guinness will make IPAs, sours, lagers — whatever customers demand and the brewers running the facility (who are American, keep in mind) dream up.
